1 white egg
1 teaspoon of vanilla
1/4 teaspoon of salt
1/4 cup of coffee

Diabetic Cake RecipesBlend together the dry ingredients. Then incorporate the beaten egg, vegetable oil, water and vanilla. Mix until smooth. Bake in 8″ square pan that is greased with butter. Cover pan and place in another shallow pan full of water.

Bake for 25mins in a preheated oven of 350°. Remove from pan and cool.

  • Preheat your oven to 180degrees
  • Next, sift the dry ingredients together
  • Beat the eggs and gradually add the second and last ingredient in the list
  • Now add this combination to the dry ingredients
  • Add the fruit and vegetables, chopped walnuts, sunflower seeds and shaved coconut.
  • Bake for 35mins or until golden

This is an incredibly easy recipe to put together and one that many diabetics have found to be delicious. You may also take note here that within the recipe there is no white flour or sugar and these are the two main things you want to look for within diabetic recipes.
